Oregano Roasted Parmesan Acorn Squash

  • 1 acorn squash
  • 2 tbsp of melted, unsalted butter
  • 3 sprigs of fresh oregano
  • 1/2 cup of grated Parmesan
  • 2 minced garlic gloves (1 tsp of garlic powder is also great here!)
  • Allie Vous Roasted Garlic blend or Smoked Applewood blend
  • pepper
  • Garnish - fresh oregano and grated Parmesan


  1. Preheat oven to 425
  2. Cut acorn squash in half, remove seeds and slice into 1/2 inch thick slices
  3. Blend melted butter, oregano, garlic, Parmesan, Allie Vous salt (see suggestion in ingredients) & pepper
  4. Fold the sliced acorn squash into the butter mixture
  5. Bake for 25 min (or until squash is cooked through and Parmesan is slightly browned)
  6. Enjoy!
